2 oz fresh lemon juice
1 oz simple syrup
4 oz sparkling water

1 pink dragon fruit, scooped
2 oz fresh lemon juice
1 oz simple syrup
4 oz sparkling water
Lemon slice to garnish
1. Scoop the dragon fruit flesh into a blender.
2. Blend until smooth and strain.
3. Combine dragon fruit puree, lemon juice, and simple syrup in a glass.
4. Add ice and top with sparkling water.
5. Stir gently and garnish.
