1 oz heavy cream or half-and-half
0.5 oz simple syrup
0.5 oz lemon juice
3 oz sparkling water

1. Combine peach purΓ©e, cream, simple syrup, and lemon juice in a shaker with ice.
2. Shake hard for 20 seconds until cream is frothy.
3. Strain over ice.
4. Top gently with sparkling water.
5. Garnish with a peach slice.
