5 fresh tarragon sprigs
2 oz fresh lemon juice
1 oz simple syrup
4 oz sparkling water

Unusual and utterly wonderful — anise-scented tarragon pairs brilliantly with fresh lemon.

2 oz fresh lemon juice
1 oz simple syrup
4 oz sparkling water
Tarragon and lemon to garnish
1. Muddle tarragon with simple syrup until fragrant.
2. Add lemon juice and ice. Shake.
3. Strain into a glass and top with sparkling water.
4. Garnish with a tarragon sprig and lemon slice.

Serve in a tall glass. Tarragon has a mild liquorice note that makes this feel quite grown-up.
