8 mint leaves
1 oz lime juice
0.5 oz simple syrup
4 oz sparkling water

1. Muddle mint with simple syrup.
2. Add pineapple juice, lime juice, and ice.
3. Shake and strain over ice.
4. Top with sparkling water.
5. Garnish with mint and pineapple.
