3/4 oz fresh ginger juice
1/2 oz fresh lemon juice
1/2 oz honey syrup
3 oz sparkling water

2 oz fresh apple juice
3/4 oz fresh ginger juice
1/2 oz fresh lemon juice
1/2 oz honey syrup

Combine apple juice, ginger juice, lemon juice and honey syrup in a shaker with ice. Shake well. Strain into a glass over fresh ice. Top with sparkling water and stir briefly. Garnish with a thin apple fan.
