1 cup fresh watermelon juice
8 fresh mint leaves
1 oz fresh lime juice
1/2 oz simple syrup
2 oz sparkling water
watermelon wedge (garnish)
mint sprig (garnish)

Muddle mint leaves in a shaker. Add watermelon juice, lime juice, simple syrup and ice. Shake well. Strain into a glass over ice. Top with sparkling water. Garnish with a small watermelon wedge and mint sprig.
