6 oz sparkling water
1 oz vanilla simple syrup (1 vanilla bean, 1 cup sugar, 1 cup water, simmered)
1 oz heavy cream
Vanilla bean and whipped cream to garnish

1 oz vanilla simple syrup (1 vanilla bean, 1 cup sugar, 1 cup water, simmered)
1 oz heavy cream

1. Make vanilla syrup: split vanilla bean, combine with sugar and water, simmer 10 min, cool, strain.
2. Combine vanilla syrup and cream in a glass.
3. Add ice.
4. Top with sparkling water and stir gently.
5. Garnish with whipped cream and a vanilla bean.
