Drinking vinegars (shrubs) are the new craft mocktail darling. This raspberry balsamic version is complex and addictive.

1. Make shrub: combine 1 cup raspberries, 1 cup sugar, 0.5 cup apple cider vinegar. Muddle, rest 2 days in fridge, strain.
2. Pour shrub and lemon juice over ice.
3. Top with tonic water.
4. Garnish with fresh raspberries and mint.
