3/4 oz fresh lemon juice
1/2 oz raspberry syrup
1/2 oz simple syrup
1 egg white
fresh raspberries (garnish)

2 oz gin
3/4 oz fresh lemon juice
1/2 oz raspberry syrup
1/2 oz simple syrup
1 egg white
fresh raspberries (garnish)
ice
Combine gin, lemon juice, raspberry syrup, simple syrup and egg white in a shaker WITHOUT ice. Dry shake vigorously for 15 seconds to emulsify. Add ice and shake again hard for another 15 seconds. Double-strain into a chilled coupe. Garnish with 3 fresh raspberries on a pick.
